Mike Durbin | Executive Chef
Mike has been a culinarian for over 20 years. He has held most every position on professional kitchens from dishwasher to prep cook, line cook, sous chef, and executive chef. His journey began in Anchorage Alaska working in some of the best restaurants in the state. Five years ago, he moved to Spokane and held the position of Chef de Cuisine for the Mirabeau Hotel in Spokane Valley. This last spring, he joined the team at Red Rock Catering as executive chef where he has been able to work to create new and diverse menus. He enjoys tailoring menus to specific tastes of Red Rock clients with a positive “Yes we can” philosophy surrounding custom menus. Mikes culinary experience runs through many different cooking styles from classic French, Mediterranean, Asian Fusion, Latin and Pacific rim. His preferred style or method is fusion. He likes to take classic recipes and drawing on his background; mix flavors, methods of cooking and innovative presentation to create dishes that are both comfortingly familiar and yet new. Mike career goal has always been to strive to be the best and he attempts to achieve that with every event. His motto is “you’re only as good as your last dish and I always try to surpass my last dish”.
